Can I put a 2c head gasket into a 2ct engine? Only reason I ask is that they are more plentiful than the 2ct's.

You could, but in my experience, the only gasket to buy is the OEM one from the dealer. Well worth the extra...

Engine wise, besides the exhaust manifold, turbo, maybe injector pump, is there any difference.
eg, there's an extra hole in the head gasket, or there's an extra bolt on the water pump, that sort of thing.

I need to know what can be exchangeable between the 2c or 2ct. As an Aussie, there's not that many of these things floating around.

Ancillaries are more or less the same, other than the injection pump, the turbo one has on-boost enrichment. Heads and blocks differ slightly depending on application- extra coolant and oil inlets and outlets. Valves, pistons and cams differ too. But everything will interchange.
