Did the previous gearbox have the same fault? If not, why did you change the 'box?
Autos do hunt around a bit- you might try loosening off the kickdown cable adjustment a couple of turns (to lessen it's sensitivity to throttle position) and change the fluid.

Might I suggest it's not actually a gearbox fault then? What does it do- are there any two gears it seems to jump between? Like say O/D and 3rd?

Kickdown cable? comes up from the gearbox to the diesel pump, and links onto the same lever as the throttle cable. Press the throttle with the floor lifted and you'll see it. Now, you want to loosen the tension on the kickdown cable, so after slackening the securing nuts on the outer cable, undo the rear nut (behind the bracket)a couple of turns- maybe 1/8"?, then tighten the front nut to lock it.
The book says that correct adjustment is achieved when the little bump on the inner cable is level with the orange rubber outer sleeve, with the throttle pedal on the floor. But wear and stretch of the outer cable (it has a couple of bends and kinks over time...) means that the little bump on the inner cable ends up in the wrong place...

If it's only O/D and 3rd that it hunts between, perhaps a check for damaged wiring around the gear lever is called for- a lack of electrical supply to the O/D off circuit will pull the transmission out of OD and back to third.
